What venue owners and managers report
The roster review alone saved us two labour hours on Thursday nights without cutting floor coverage. Helen sat through a full dinner service before suggesting changes — she noticed our runners were doubling back past the pass three times an hour.
Marcus T. — Owner, neighbourhood bistro, West End
Food cost reporting finally made sense to my head chef. I would have liked the written report a day sooner, but the follow-up call walked us through every line item.
Priya N. — General Manager, coastal hotel restaurant, Sunshine Coast
Daniel's menu costing session caught three dishes we were essentially giving away. We repriced two and reworked the third — covers stayed steady and gross margin on food lifted noticeably within six weeks.
James & Linh V. — Co-owners, modern Vietnamese café, Fortitude Valley
Case note: Valley Street trattoria
A 72-seat Italian trattoria approached us in early 2025 with rising food costs despite stable covers. During a two-day performance review we found inconsistent portioning on pasta mains, a prep schedule that left the cold section overstaffed on quiet Mondays, and comps recorded inconsistently between POS and the manager log.
We delivered a revised prep guide, a simplified comp policy staff could follow at the terminal, and a fortnightly food cost check template. Three months later the owner reported food cost down 2.4 percentage points and managers spending less time reconciling tills after close.
Case note: Regional pub dining room
A country pub with a 90-seat dining room struggled with long ticket times on Friday steak nights. Our review focused on pass communication and section assignments rather than adding kitchen labour. After implementing a new expo checklist and adjusting the grill station mise, average ticket time during peak dropped from 28 minutes to 19 minutes over four weeks.
The venue manager noted that some front-of-house staff needed extra coaching on the new pacing — we included a second brief visit at no charge to reinforce the changes.
