Who this is for

Independent restaurants, cafés, bars, and small hotel dining rooms where the owner or GM senses something is off — covers look healthy but profit is thin, managers are constantly firefighting, or guest feedback mentions slow service or inconsistent dishes. The review suits venues from 30 to 200 seats with at least one full service period.

What you receive

A Hospitality Performance Review is our flagship engagement. Over two on-site days we observe a live service, review your kitchen and floor workflows, analyse recent cost and roster data, and run a structured workshop with your leadership team.

Included:

  • Full service observation (kitchen pass, floor sections, bar if applicable)
  • Review of food and beverage cost trends over the prior eight weeks
  • Roster and labour percentage analysis against your segment
  • Guest journey mapping from arrival to payment
  • Written report with prioritised recommendations (typically 15–25 pages)
  • 90-minute follow-up call two weeks after delivery

Not included:

  • Recipe development or menu redesign (available as a separate Menu Costing Session)
  • Recruitment or HR advisory beyond roster structure
  • Liquor licensing or legal compliance advice

How it works

Day 1 — Observation: We arrive before service begins, walk the venue with you, and stay through a representative service period. We take notes on prep timing, communication between stations, section pacing, and how comps or voids are handled.

Day 2 — Workshop: With owners and key managers present, we present preliminary findings, agree on the top three priorities, and draft implementation steps. You leave with clarity on what to tackle first and who owns each action.

After the visit: Within ten business days you receive the full written report. A follow-up call checks progress and answers questions that arise once staff begin implementing changes.

Timeline and location

Most reviews are scheduled within three weeks of deposit receipt. We conduct on-site work across South East Queensland as standard, with regional travel available by arrangement. Remote components (report writing, follow-up calls) are handled from our Brisbane office.

Investment

From $4,800 AUD for venues up to 120 seats with a single primary service period. Larger venues or those with multiple service periods receive a scoped quote before booking.
